This is the king of all comfort foods in my opinion. It also happens to be my favorite pasta to serve at a dinner party. Here are my reasons: You can braise the short ribs the night before so less cooking stress the day of. The pasta allows you to stretch the beef to feed more people while keeping costs low. Most importantly, it is DELICIOUS.

Braised Short Rib Ragu

Ingredients

  • 1 batch red wine braised short ribs see link above
  • 1 lb rigatoni pasta
  • 4 tbsp butter
  • ¼ cup parmesan cheese freshly grated, plus more for serving
  • 3 tbsp chives for garnish

Instructions

  1. Shred short rib meat. Transfer meat and sauce to a pan and reheat over medium low.
  2. Bring a large pot of salted water to a boil. Cook pasta al dente.
  3. Reserve some pasta water and drain. Combine pasta and short ribs and toss to coat. Add butter, parmesan, and a splash of pasta water. Stir until homogenous.
  4. Plate the pasta and top with more parmesan and chopped chives.
