This is officially a Cheesecake Factory fan account. My go to order: strawberry lemonade, avocado eggrolls (duh), chicken marsala, and red velvet cheese cake. Also: special shoutout to that brown bread.

I have a fun Cheesecake Factory story that I would like to share with the class..

I was about 15 years old. My older brother and his girlfriend at the time agreed to drive me to the mall for a luxurious dinner at TCF. I had gone rogue and ordered a pasta primavera (my first mistake). The waiter asked if I’d like some freshly grated parmesan. Obviously I said yes. He whips out a massive 2 pound block of parm, about the size of a large brick. As he’s grating, the block of cheese slips from his grip and hits me square in the forehead. The force of the cheese caused me to slam my head into the back of the mahogany booth and GAVE ME A CONCUSSION. The waiter gasped, grabbed the block of cheese off the floor, ran off and was never to be seen again.

I did not press charges but I did get a free slice of cheesecake ?

Cheesecake Factory Avocado Eggrolls

yields:4 Serves

Ingredients

For the Eggrolls
  • 3 large avocados medium dice
  • ¼ cup sun-dried tomato chopped
  • ¼ cup cilantro chopped
  • ⅓ cup diced red onion
  • 10 egg roll wrappers
  • vegetable oil for frying
For the Cashew Tamarind Sauce
  • 1 cup cilantro
  • ⅓ cup cashews roasted and salted
  • 4 scallions
  • ⅓ cup honey
  • 1 tsp tamarind paste
  • 3 tbsp evoo
  • 3 tbsp water
  • ¼ cup rice vinegar
  • zest and juice from 1 lime
  • kosher salt

Instructions

  1. To make the sauce, place all of the ingredients in a food processor and blend until emulsified. Season with salt to taste.
  2. In a bowl, combine diced avocado, red onion, cilantro and a pinch of salt. Mix to combine.
  3. Add about 2 tbsp of filling to each egg roll wrapper. Fold and use warm water to seal shut.
  4. Heat a pot of vegetable oil to 375. Fry the eggrolls in batches for about 5-8 minutes or until golden brown.
  5. Slice each egg roll on the diagonal and serve with dipping sauce.
