Then, we embrace the sweetness of summer tomatoes with a raw (or almost raw) tomato sauce that comes together with 4 ingredients in under 10 minutes. And we’re ditching the whole flour, egg wash, breadcrumb dredge-then-fry charade and opting for a perfectly crispy toasted panko sprinkle. This minimal effort, maximum flavor cooking is what summer is all about.

This was seriously so delicious! I prefer it over regular chicken parm and coming from me, that’s saying a lot. I plan to make this on rotation throughout the summer! I can’t say enough good things about it.
Commenting for the gals who live for this recipe and the homemade Italian vinaigrette – the link is broken but I printed it out a year ago LOL. 1/4 cup white balsamic vinegar, 1/2 cup EVOO, 1 tbsp dijon, 1/2 tbsp honey, 1/2 tbsp oregano, pinch red pepper flakes, 1/2 tsp salt, fresh ground pepper. Combine & whisk until emulsified. Keep in fridge up to 2 weeks. <3
This was SO GOOD!!! All the fav flavours of the classic chicken parm but light and perfect for summer… The tomato sauce was so fresh and delicious I will be using this technic for all my pasta dishes now!!! YUM 12/10

made this a few weeks ago in a wok (easy to fry in) and it turned out perfectly! served with the sauce and fettuccini noodles with a Ceasar salad. 10/10 will make again. I am Gluten free so i didn’t use your panko ingredients but what i have made in the past.
