Apple Cobbler

Ingredients

For the Apples

  • 6 medium or 5 large apples, like honey crisp, cut into a medium dice*
  • 5 tbsp butter
  • 1 lemon, juiced
  • 1 cup brown sugar
  • 1/3 cup granulated sugar
  • 1.5 tbsp pumpkin pie spice
  • 2 teaspoons vanilla bean paste, or extract
  • 1 tsp sea salt
  • 1/4 cup flour

 

For the Topping

  • 1 0.7 oz pack of cinnamon apple chips , (this is optional)
  • 2 cups flour
  • 1/3 cup brown sugar
  • 1 tbsp cinnamon
  • 1 1/2 tsp baking powder
  • 3/4 tsp sea salt
  • 6 tbsp of cold butter cut into a small dice, plus 2 tbsp of room temp butter for greasing the baking dish
  • 1 egg
  • 1 cup buttermilk
  • 1 tsp vanilla bean paste, or extract

 

Instructions

  1. Pre heat your oven to 375.
  2. Make the apple filling: In a large pot, combine the diced apples with all of the remaining ingredients except the flour. Cook over medium heat until the sugar dissolves, about 5 minutes. Add the flour, stir to incorporate, and continue cooking until the liquid has slightly thickened, about 2 more minutes. Turn off the heat and set aside.
  3. Grease a baking dish. I used a ~16" oval, but any similar sized baking dish will work (13x9, etc). Transfer the apple filling into the baking dish and spread into an even layer.
  4. Make the topping: Add the apple chips to a food processor. Process until very finely chopped. This will add another layer of apple flavor to the dessert, but totally ok to skip. Next, add the flour, brown sugar, cinnamon, baking powder, and salt, and pulse to combine. Add the butter and process until the mixture resembles coarse wet sand, about 10 seconds. Transfer to a large mixing bowl and add the buttermilk, vanilla, and egg. Use a fork to gently whisk to combine until no dry spots remain, without over working the dough.
  5. Use a spoon or your hands to scatter the dough over top the apples so that they are evenly coated. Brush with heavy cream and sprinkle with brown sugar. Transfer to the oven and bake until the apples are tender and the topping is golden brown, about 40 minutes. Let cool slightly before serving.
  6. Serve hot with vanilla ice cream.
