Tomato Sandwich

Ingredients

  • 2 slices of potato sandwich bread
  • 2 tbsp butter
  • 1 large heirloom tomato
  • 2 tbsp mayo
  • zest from 1/2 lemon
  • 2 tbsp bacon bits (sprinkles)
  • 1 tbsp chives
  • Flaky salt

Instructions

  1. Heat a pan over medium low heat and add the butter. Once melted, add the bread and toast both sides until golden brown. Remove and set aside to cool on a wire rack lined sheet tray.
  2. Using a sharp serrated knife, slice the butt end off of your tomato, then slice a piece of tomato about 1 inch thick.
  3. Mix together mayo and lemon zest. Spread the mayo on one side of both pieces of bread. Add the tomato, a sprinkle of salt, chives, and the bacon. Close the sandwich and slice in half and serve.
