Some Valentine’s Day dinner inspo! I love this recipe because it feels fancy, but requires very little effort. Plus, the mussles take only 3 minutes to cook which makes this surprisingly weeknight friendly. No need to make french fries from scratch, frozen fries cooked in the oven will work just fine!

Ingredients

  • 2 lbs mussles, cleaned & beards removed
  • 3 tbsp olive oil
  • 1/4 cup finely chopped shallots
  • 2 tbsp finely chopped garlic
  • 1 cup champagne (can sub with any sparkling white or regular white wine)
  • 4 tbsp salted butter, cold
  • 1/2 cup chopped herbs (I like a mix of parsley and tarragon)
  • sea salt
  • fresh lemon juice (optional)
  • french fries and toasted bread for serving

Instructions

  1. Pre-heat a dutch oven over medium high heat. Add the olive oil the shallots and a pinch of salt. Cook until shallots begin to soften, but not brown, about 2 minutes. Add the garlic and cook for another minute. Add the champagne and bring to a boil.
  2. Add the mussles to the pot and cover with a lid for 3 minutes until they open. If you find some stubborn mussles that won't open, toss them.
  3. Transfer the cooked mussles to bowls. Reduce heat to medium low and add the cold butter, stirring constantly as it melts to emulsify the sauce. Once butter is melted and sauce is emulsified, turn off the heat and add half of the chopped herbs directly to the sauce. Taste the sauce and adjust with salt or a squeeze of lemon juice if needed.
  4. To serve, spoon the sauce over the mussles and top with more fresh herbs. Serve with french fries and crusty bread.
