Shaved Brussles Sprout Salad

Ingredients

  • 1 lb of brussles sprouts, finely shaved on a mandolin
  • 1 honey crisp apple, finely shaved on a mandolin, bigger pieces then sliced in half
  • 1/4 cup of nuts, I like roasted walnuts, pine nuts, or candied pecans
  • 1/2 cup of shaved parm, + fresh grated parm for serving
  • 1 batch of champagne vinaigrette, but sub champagne vinegar for apple cider vinegar

Instructions

  1. If preparing this ahead of a dinner party, my trick for keeping the apples from browning is to keep all of the slices stacked on top of each other so that the majority of them aren’t exposed to air and sacrificing the 2 sandwiched on the outside.
  2. Then when you’re ready to serve just toss everything together in a mixing bowl with a little bit of dressing, some flaky salt, and fresh cracked black pepper. Pile the salad high on the plate and top with a blanket of freshly grated parm.
