Inspired by a dish I had at Ernestos, a Basque restaurant in the LES. Hot potato chips are layered with iberico ham, manchego cheese, green olives, pickled peppers, and (optional) anchovies. You could easily sub with prosciutto, parm, and banana peppers for an Italian version.
Spanish Nachos

Ingredients
- potato chips
- iberico ham, or serrano or prosciutto ham, room temp
- pickled peppers, like piparra or banana peppers
- green olives, pitted and torn
- manchego cheese
Instructions
- preheat the oven to 400. Transfer the chips to a baking sheet and bake for 5-10 minutes or until warm, but not browned.
- Layer the hot chips with the ham, peppers, olives, and freshly grated cheese and serve.
