Strawberry Vodka Lemonade

Ingredients

  • 1 lb fresh strawberries, green tops removed
  • 1/3 cup sugar, or sweetener of choice
  • pinch of sea salt
  • 6-8 medium lemons, juiced, plus more for garnish
  • 2 cups vodka
  • 2 cups filtered water
  • club soda for serving, optional

Instructions

  1. Transfer strawberries to the freezer overnight. Remove from the freezer and thaw at room temperature until fully defrosted, mixing occasionally and breaking up any pieces frozen together. Once the strawberries have defrosted, combine in a blender with the sugar, a pinch of sea salt, and about 1 cup of lemon juice to start. Blend until smooth. Transfer to your serving pitcher along with the vodka and water. Mix to combine. Pour over ice and taste and adjust to your preference with more sugar or lemon juice if desired.
  2. To serve, fill a glass all the way to the top with ice, 3/4 of the way at the very minimum.* Pour lemonade over ice, option to top with club soda for a lower ABV beverage. Garnish with a lemon slice.
  3. *This is a non-negotiable. This recipe yields a strong beverage, that is not a mistake. It’s summertime, it’s hot outside, and the ice will start melting the second you pour your drink. But not to fear, the base of this cocktail is strong enough and will hold up perfectly fine to the dilution of the ice, and stay nice and cold down to the last sip.
  4. Tip: if the pitcher is too small to fit all of the liquid, or if you want to double the strawberry puree and vodka measurements, you can skip the water and encourage guests to pour themselves half a glass and top their drinks with sparkling water!
