Guinness Chocolate Cake
Ingredients
For the Cake
- 1 can of Guinness Draught Stout
- 1 cup butter, plus more for greasing the pan
- ¾ cup dutch cocoa powder, plus more for the pan
- 1 ¾ cup sugar
- ⅔ cup sour cream
- 2 eggs
- 1 tbsp vanilla
- 2 heaping cups flour
- 2 1/2tsp baking soda
- 1 tsp salt
For the Chocolate Toffee Sauce
- 1 cup dark brown sugar
- 2 tbsp dutch cocoa powder
- ½ cup heavy cream
- 1 tsp sea salt
- 3 tbsp butter
For the frosting
- 8 oz cream cheese, room temperature
- ½ cup butter, room temperature
- 1 cup powdered sugar
- 1 tsp vanilla extract
- Pinch of salt
- 2 tbsp heavy cream
Instructions
- Preheat oven to 350 degrees.
- Pour the Guinness into a medium saucepan, and simmer over medium heat until reduced by about half. Pour the liquid into a heat safe bowl and set aside. In the same pan, melt the butter. Once melted, turn off the heat and add 1 cup of the Guinness reduction, the sugar, and the cocoa powder. Whisk out any lumps and set aside to cool.
- In a large mixing bowl combine the sour cream, eggs, vanilla, and the cooled Guinness mixture. In a medium mixing bowl, whisk together the remaining dry ingredients. Fold the dry ingredients into the wet until just combined, careful not to over mix.
- Prepare a 9 inch cake pan by greasing with butter. Line the bottom with a circle of parchment. Add a few tbsp of cocoa powder to the cake pan and tap and turn the pan to evenly distribute. Tap out any excess. Add the cake batter to the pan and transfer to a 350 oven to bake until a toothpick comes out clean, about 45 minutes.
- While the cake is baking, prepare the chocolate toffee sauce. In a small saucepan combine all of the ingredients and bring to a simmer. Simmer on medium low until thickened, about 10 minutes. Set aside.
- Remove the cake from the oven and allow to cool in the pan for about 10 minutes. Transfer out of the pan. Use a tooth pick to poke holes across the top of the cake. Pour the warm toffee sauce over the cake to coat. Allow the cake to cool to room temperature.
- To make the frosting, combine all of the ingredients in a mixing bowl and mix until thoroughly combined. Add a few extra splashes of heavy cream as needed to loosen the frosting. Top the cooled cake with the frosting and serve.
