North Carolina Style Pulled Pork
Ingredients
For the Pulled Pork
- 3 lbs pork shoulder (trimmed)
- 1 medium sweet onion, chopped
- 1/2 cup ketchup
- 1/3 cup Worcestershire sauce
- 1/3 cup apple cider vinegar
- 1 tbsp ground mustard
- 1 tbsp garlic powder
- 1/2 tsp paprika
- 1/4 cup brown sugar
- 1/2 tsp liquid smoke (optional)
- Pinch red chili flakes
- Pinch salt and pepper
For the Lexington-Style Carolina BBQ Sauce*
- 1.5 cups apple cider vinegar
- ½ cup ketchup
- 1 tsp Salt
- ½ tsp kashmiri chili powder or ground red pepper of your choice
- 1 tablespoon brown sugar
*can be doubled or tripled if using for sides in addition to on pork
Instructions
- For the pork: Combine all ingredients in the crock pot bowl and whisk together. Add the onion and the pork, coating the pork on all sides. Cook for 8-10 hours on low.
- For the BBQ sauce: Combine ingredients in a small sauce pan and give the mixture a quick stir. Bring to a simmer until the brown sugar is dissolved. Remove from heat and set aside to let cool.
