Growing up, my extended family rented a house in Nantucket for a few weeks every summer. Beyond the occasional pizza night, all meals were made at home. And despite the beyond comfortable accommodations, the kitchen was most often stocked with the bare minimum. This is something I’ve now experienced as an adult, when friends and I go in on a weekend rental. The spice rack is expired, if not completely bare; the knives are dull; and the kitchen is barely functional. In Nantucket, my family relied on the grill, a lesson I’ve taken with me to this day! The grill may be smaller than a laptop, but it’ll have to do. And when I’m at a rental, the last thing I want is to blow my grocery money on a bunch of pantry ingredients that I’ll inevitably have to leave behind. All of this is to say that I developed this grill-only recipe using mainly ingredients from the produce aisle (plus a few pantry items almost guaranteed to have in any rental) and intentionally measured so that not a single bit of it will go to waste!

HOT TIP: If the grill is small and you need to work in batches but don’t want the food to get cold: preheat the oven to 200°F, transfer cooked proteins to a sheet pan and cover tightly with foil, and keep warm in the oven until time to serve.

Simple Surf and Turf

Ingredients

For 8 to 10 people:

  • 3 pounds chicken (5 to 6 small to medium chicken breasts)
  • 2 pounds skirt steak, or similar
  • 2 pounds shrimp, peeled and deveined, tails on (2 dozen jumbo shrimp)

For 3 to 5 people: 

  • 1.5 lbs chicken (2-3 chicken small-medium breasts)
  • 1 lb skirt steak, or similar
  • 1 pounds shrimp, peeled and deveined, tails on (1 dozen jumbo shrimp)

For the marinade (8-10 servings)

  • 1 1/2 cups olive oil
  • 4 lemons, zested and juiced (½ - ¾ cups)
  • 1 whole head garlic, each clove peeled and finely grated 
  • 1 large bunch fresh parsley
  • 1–2 fresh red chilis or jalapeños
  • 3 teaspoons kosher salt 
  • 6 tablespoons AP Seasoning Blend, optional 
  • Freshly ground black pepper

Instructions

  1. Make the Marinade: Either finely chop the ingredients by hand then combine, or blend using a food processor, blender, or immersion blender until smooth. This should yield just shy of 2 cups of marinade. 
  2. Prep the meat: Working one at a time, transfer the chicken breasts into a plastic zip top bag. Use a flat bottom frying pan (or your fist!), and pound out the chicken until each piece is relatively uniform in thickness. It doesn't have to be perfect but this will tenderize the meat and allow the chicken to cook more evenly. Transfer the tenderized breasts into a fresh zip top bag along with 1 cup of marinade and place in the fridge to marinate for at least 1 hour or up to 8 hours. 
  3. Depending on the cut of steak you use, you may want to tenderize as we did the chicken, but this is optional. Transfer the steaks into a separate zip top bag along with ½ cup of marinade and place in the fridge to marinate for at least 1 hour or up to 8 hours. 
  4. Prep the Shrimp: Transfer the shrimp to a zip top bag, add ¼ cup of marinade, and transfer to the fridge to marinate for 20 to 30 minutes. 
  5. Reserve remaining marinade for serving. 
  6. Grill: Preheat the grill to medium high. Cook the chicken until it reaches 160°F, about 3 to 5 minutes per side. Cook the steak until it reaches 120°F for medium rare, about 5 to 7 minutes per side. Cook the shrimp until opaque and cooked through, about 2 minutes per side. 
  7. To serve:. Arrange the grilled proteins on a serving platter and brush or spoon over with the remaining marinade.
